以乙二胺四乙酸二钠、柠檬酸、抗坏血酸为PPO抑制剂，采用L9（3~4）表进行正交实验，结果表明：0.003%EDTA+0.1%柠檬酸+0.1%抗坏血酸能最大限度地抑制建莲的多酚氧化褐变。

By L9 ( 34 ) researching on methods of Jian-lotus PPO 's activity inhibitation , the result shows that the combination of 0.003 % EDTA , 0.1 % citric acid and 0.1 % ascorbic acid could enormously inhibit Jian-lotus 's polyphenol oxidation .
