组织蛋白酶B（cathepsinB，CB）是一种蛋白水解酶，对多种植物蛋白（大豆、玉米、棉籽蛋白等）和动物蛋白（血红蛋白、血清蛋白、卵黄磷蛋白、明胶等）都有水解活性。

Cathepsin B ( CB ) is a proteolytic enzyme . It can hydrolyze vegetable protein ( soy , corn , cottonseed protein , etc. ) and animal protein ( hemoglobin , serum protein , vitellin , gelatin , etc. ) .
